Beneath a glass canopy bathed in shifting reflections, with a 360° view of the sea and the mountains, Riviera restaurant unveils a cuisine of light and contrast, crafted by Michelin-starred Chef Sébastien Tantot, where every dish plays with transparency, texture, and bold, honest flavors.

Mediterranean amberjack crudo meets white peaches from Provence, iodine-rich elements are served pure and unadorned, the “Georges Fevre” sea bass glows with a tomato syrup infused with truffle pesto, and whole roasted duck is elevated by a sauce of eleven floral and citrus vinegars.

Whether on the terrace or in the dining room, time slows, and the Riviera becomes pure sensation.

As Executive Chef of The Maybourne Riviera, he fully expresses his vision through the plant-forward, meticulously crafted dishes of Riviera restaurant, where every gesture matters and every flavour is thoughtfully composed.

He is supported at Riviera by the talented Chef Guillaume Boumati, with whom he shares the same dedication to detail and culinary harmony.
