Raised in humble beginnings, Sébastien discovered his culinary passion early in life. His training includes time in legendary kitchens: Pierre Gagnaire’s Balzac, Yannick Alléno’s Le Meurice, and Gérald Passédat’s Le Petit Nice, where he spent seven years as Executive Chef.
In 2019, he opened À la Bonne Idée, his own restaurant in the Compiègne forest. It earned a Michelin star swiftly, along with accolades such as Chef of the Future by the International Academy of Gastronomy and Chef of the Year by Omnivore.
His approach blends classic French gastronomy with contemporary refinement, reflecting a personal style grounded in precision, creativity, and artistic expression.
